An unusual Irish single malt here, made using liquid from the Cooley Distillery and finished in Caribbean rum casks. Cooley double distils, rather than the traditional three times for Irish whiskey. The philosophy of the founders was to create a range of styles and flavours - and this independently bottled expression is a joy to discover.

Nose: Some ripe fruits with a hint of spices with a dried fruit and banana aroma with a hint of fruit cake and almond flakes. 

Palate: Balanced and fruity on the front with a rich pineapple and candied citrus fruits, some red apple, pears and cinnamon add to the rich mid palate that takes us to a lingering rich finish.
